Profile Bachelor’s degree in Food Science and Technology and Master’s degree in Food Science at the University of
Florence. One year research grant in “Characterization of food fermenting microorganisms” at the Department of
Agricultural, Food and Forestry Systems (University of Florence)
Research interests and PhD project
Fermented food microbiology, particularly sourdough. Selection of Lactic Acid Bacteria and Yeast to be used as
starter in order to improve the technological and nutritional features of bakery products
